The most tender cut on the steer, full stop. Filet mignon comes from the tenderloin — a muscle that does almost no work — so it cuts like butter and carries a mild, elegant flavor that lets the quality of the beef speak. We cut ours into generous 6 to 8 ounce portions.
Lean by nature, so don't overcook it: a hot sear, a quick rest, pulled at medium-rare. Wrap it in our thick-cut bacon if you want to gild the lily. Available in Choice, Prime, or Texas Wagyu.
