Brazil's favorite cut, and once you've had it you'll understand why. Picanha is the sirloin cap — a tender, flavorful muscle crowned with a thick layer of fat that bastes the meat as it cooks. We sell it as ready-to-grill half-pound strips or as a whole cap for the churrasco treatment.
Score the fat, season with just coarse salt, and grill fat-side down to render it, then sear the meat. Slice against the grain and serve. Available in Choice, Prime, or American Wagyu.
