The ribeye is the steak every other steak gets measured against — a thick ribbon of marbling running through beef that stays rich, juicy, and forgiving whether you're on a screaming-hot grill or in a cast-iron skillet. We hand-cut ours a full inch thick from the heart of the rib, 15 to 17 ounces of steakhouse-grade beef, fresh in our Austin shop.
