If fajitas are the plan, this is the cut. Outside skirt is the richer, more tender of the two skirts — loose-grained, deeply beefy, and built to take on a marinade and a hot fire. We sell it in one-pound packs, trimmed and ready, in Choice, Prime, or Texas Wagyu — plus an already-seasoned fajita option when you want to skip straight to the grill.
Cook it fast and hot, pull it at medium-rare, and always slice against the grain. Sizzling platter optional but encouraged.
